I like eggs, and I used to make them at home for breakfast on the weekends. I'd buy a half-dozen eggs at a time, and try to go through them before they passed their sell-by date. Now that we're getting a dozen eggs at a time, I have to be conscientious about eating them more often. Since we started getting the Fair Shares eggs, I think we've had them for dinner three times.
I made a salad first. This used the last of the radish shoots.
For dinner tonight, I made a spinach omelet, sauteed potatoes and onions, and grilled asparagus. I had three things cooking on the stove top at the same time that required attention and I did not like that feeling. Roy cut up the onion for me, and I called him back in the kitchen to help with the potatoes cooking while I was dealing with the eggs.
We used a lot of foods from Fair Shares: lettuce mix, radish shoots, mint, and olive oil in the salad. Eggs, spinach, asparagus for dinner.
